The dish: 'Apple Symphony, a dessert made solely from Hawke's Bay apples'

I have taken my inspiration for this dish from the abundance of Hawke’s Bay apples on offer. The hotel’s orchards have been supplying us with some crunchy fresh apples this season and I wanted to create something delicious with this produce to follow our ‘paddock to plate’ philosophy that we advocate in our restaurant. Together myself and our kitchen team explored various ways to showcase the delectable delights of the Hawke’s Bay apple and that collaboration brought this innovative dish.

The composition of this dish works in perfect harmony to create an Apple Symphony. The main components of our dish are made solely from apple, in six different ways. Starting with a base of cinnamon crumble for crunchy texture, followed by the roast apple puree flavoured with warming Winter spices such as cinnamon and star anise; accompanied with pickled apple to give a sour bite; topped with sweet apple sorbet and caramelised smoked apple; drizzled over with apple syrup; finishing with dried apple slices adorning the top. 

Following the advice of our expert Front of House Team, we would recommend a dessert wine from the Gewürztraminer and Riesling varietal to pair with this dish. A perfect match for us, would be the Ngatarawa Late Harvest 2016 as the grape varietal will match well with the cinnamon flavours of the apple dessert. The Gewürztraminer matches the sweetness whilst the Riesling’s natural acidity balances the less sweet apple components on the plate.

This dish will be featured in our beautiful three course or five course set dinner menus. Reservations are essential at the Mangapapa Restaurant, open seven days from 6pm for dinner.

The hotel’s new Head Chef, Norka Mella Munoz has started a fantastic revolution with the Mangapapa Restaurant. The first female Head Chef in Mangapapa history. Chef Norka is Chilean, and has been living in New Zealand for fourteen years.

Chef Norka calls herself ‘Chiwi’ and her cuisine reflects that, with a fusion of ‘kiwi’ local produce and her Chilean flair on the new restaurant menus. She has worked all over the world, starting with six years of working for five star hotels in Chile; where she won various gold culinary awards working for hotels such as the Intercontinental, the fabulous Explora Las Torres and the Explora Patagonia.

Following her arrival in New Zealand, Chef Norka continued working for various hotels but her main passion was her work as a tutor in Auckland sharing her knowledge with new talented chefs. Then came a move to Hawke’s Bay where Chef Norka was tutoring new chefs until she came across a role at Mangapapa Hotel that was perfect for her.
